A sweet treat with a little extra protein and fiber thanks to legumes!
Ingredients
1 15oz can of cannelini beans, drained and rinsed
½ teaspoon baking powder
¼ teaspoon salt
½ cup dark brown sugar
2 teaspoons vanilla extract
4 tablespoons unsalted butter, melted
1 large egg
1 cup all-purpose flour
1/2 cup chocolate chips
Directions
Preheat the oven to 350. Lightly grease an 8” brownie pan.
In a food processor or blender, add the beans, baking powder, salt, brown sugar, vanilla and melted butter. Blend until very smooth, scraping down the sides as needed.
Add the flour and pulse to combine. Then add the egg and combine.
Spread the mixture into the prepared pan. Note – it will be very thick and this is ok. Sprinkle chocolate chips on top and stir around. Bake on center rack for 15-20 minutes. It’s done when a toothpick inserted comes out barely moist.
