Speckled Egg Muffins

Who doesn’t fall for the appeal of muffins? These grab-n-go bites make a terrific breakfast, brunch or snack item, and they freeze well for a quick “pop it in the microwave” breakfast-on-the-run. And it’s always a plus to get some veggies in the morning!

Ingredients (makes 12)

10 eggs, whisked
1 cup 1% milk
1 cup cheddar, shredded
1 cup broccoli, chopped
1 tablespoon dijon
salt & pepper to taste

Directions

  1. Preheat oven to 350 and grease a 12-tin muffin pan.
  2. Combine all ingredients in a large bowl.
  3. Use a ladle or large spoon to divide mixture evenly into 12 tins.
  4. Bake for 25-30 minutes or until muffin is solid and top turns golden brown.
