Lemony Kale Salad

This No Fail Kale is quick and easy to make, and kids can channel their energy into massaging the leaves of this nutritional powerhouse. Ingredients (serves 4)
1 bunch kale
1 lemon, juiced
1/2 cup shredded parmesan
1/2 cup dried cranberries
2 tablespoons olive oil


1. Wash kale and then strip leaves of their ribs (strong cord that runs down the middle).  Tear or chop leaves into bite size pieces. Place in large salad bowl.
2. Pour juice from 1 lemon over kale and massage leaves well, rubbing fingers against leaves for 2-3 minutes. Leaves will turn a deeper green and shrink down in size.
3. Sprinkle parmesan, cranberries and olive oil into bowl. Toss well and enjoy!
