Lemony Kale Salad

This No Fail Kale is quick and easy to make, and kids can channel their energy into massaging the leaves of this nutritional powerhouse. This green has grown a ton in popularity the past few years for good reason! With just 5 simple ingredients, this recipe is poised to becomes your family’s favorite too! Note: this recipe is ideal for batch cooking because it keeps well for 4-5 days in the refrigerator.  Make it once, and enjoy for several days! 

Ingredients (serves 4)
1 bunch kale
1 lemon, juiced
1/2 cup shredded parmesan
1/2 cup dried cranberries
2 tablespoons olive oil

Directions:

1. Wash kale and then strip leaves of their ribs (strong cord that runs down the middle).  Tear or chop leaves into bite size pieces. Place in large salad bowl.
2. Pour juice from 1 lemon over kale and massage leaves well, rubbing fingers against leaves for 2-3 minutes. Leaves will turn a deeper green and shrink down in size.
3. Sprinkle parmesan, cranberries and olive oil into bowl. Toss well and enjoy!
