Lemon-Tahini Dressin

Wouldn’t you eat more salads if you had the perfect dressing full of flavor and zest? Comin’ at ya now….

¼ cup extra-virgin olive oil
¼ cup tahini
3 Tbs lemon juice, more to taste
2 tsp Dijon mustard
2 tsp honey
½ tsp salt
Black pepper, to taste
2 tablespoons ice-cold water, more as needed

In a glass jar, combine oil, tahini,  lemon juice, mustard, honey, salt, and several twists of black pepper. Whisk thoroughly.
Add the cold water and whisk again. Taste and add more lemon juice, pepper or salt, if desired. If your dressing is too thick to drizzle, simply whisk in more cold water, a bit at  a time. Serve.

Dressing will keep for at least 1 week in the fridge, covered. If It hickens with time, simply thin it with a little more cool water or lemon juice as needed
