Lemon Basil Vinaigrette

Summer’s here and it’s time to lighten up our meals with plenty of fresh veggies and salads. Nothing makes a salad like a fresh homemade dressing, which can be super quick and easy. There’s a saying, “If you build it, they will come.” I find if I have dressing ready to go, my family members are more likely to choose to eat healthful salads.

Ingredients
1/4 cup Olive Oil
1 Tbs Apple Cider Vinegar
1 Tbs Lemon Juice
1 tsp mayonnaise or plain yogurt
1 tsp dijon mustard
2 Tbs fresh basil
Season to taste w/salt & pepper

Directions
1. Whisk all ingredients together and enjoy.
2. Keeps well in fridge for 5-7 days.
