Dark Chocolate Mousse

Meet a chocolate dessert that’s super simple to make, delivers on great taste AND boasts an impressive nutrition profile too. Plus it’s also vegan and GF.  This recipe has 5 grams of protein to help keep you satisfied and nourish your body plus it’s a good source of iron (great for young women, esp. athletes) – it’s the opposite of “empty calories.” Speaking of calories, it has a very modest 115 and ZERO saturated fat. This simple NO COOK dessert calls for only 4 ingredients, plus a blender or hand blender. The SECRET ingredient is silken tofu (I promise you, folks never even guess this is in here.).

Ingredients (serves 4)
12oz silken tofu (3/4 of 16oz package)
2 Tablespoons dark cocoa powder (unsweetened)
1/3 cup maple syrup
1/2 tsp vanila

Directions

1. Blend/whip tofu with blender or stick blender until smooth.
2. Add in other ingredients and mix well.
3. Spoon into small bowls or ramekins and refrigerate 3 or more hours (or overnight) to set.
